Learn how to make Spaghetti Pasta in Basic Tomato Sauce from our chef Smita Deo on Ruchkar Mejwani. This is a homemade Italian vegetarian pasta recipe where boiled spaghetti is tossed in tomato sauce prepared from tomato puree and aromatic herbs. <br /> <br />Ingredients: <br /> <br />For The Sauce <br />6 tomatoes blanched and pureed <br />1 red bell pepper <br />1 tbsp of garlic paste <br />4 tbsp olive oil <br />1 tbsp oregano <br />1 tbsp chilli flakes <br />1 tbsp tomato paste <br />½ cup finely chopped fresh basil <br />½ cup fresh cream <br />½ tsp pepper powder <br />Salt to taste <br />½ a packet of spaghetti <br /> <br />Method: <br /> <br />- Apply little oil to the bell pepper and roast it till almost charred remove the charred skin and puree it. <br />- Heat oil and add the garlic and once it turns golden add the oregano, chilli flakes and the bell pepper puree. Sauté for a few seconds. <br />- Add the tomato puree, the tomato paste and sauté for 7-8 minutes. <br />- Once the oil floats add the pepper powder, salt and bring the sauce to a boil. <br />- Get the sauce off the flame and add the cream and mix well <br />- Boil 2 litres of water with 2 tbsp of water and add the pasta and boil till the pasta is ¾ th done i.e Al dente. And then add to the sauce and serve with warm garlic bread.
